Gluten free Quiche

Now who doesn’t like quiches? This glutenfree vegetable quiche recipe is hearty, healthy & delicious! Perfect for your Christmas dinner or even a weekday dinner!

Yield: 4 small sized quiches

Ingredients:
For the crust:
  • 2 cups packed almond flour
  • 3 cloves garlic, pressed
  • 1 tsp. dried oregano
  • 1 tsp. freshly grated turmeric
  • 1 Tbsp ground black pepper
  • 1/3 cup olive oil
  • 1 ½ Tbsp. water
  • ½ tsp. Himalayan salt
For the filling:
  • 3 tsp. olive oil
  • 3 cups Spinach
  • 1 ½ cup of broccoli, thinly chopped.
  • 4 eggs
  • 1 cup almond milk
  • ½ tsp. Himalayan salt
  • 1 tsp. cayenne pepper
  • 2 asparagus, sliced
  • 1 tsp. paprika.
  • 1 cup of artichokes thinly chopped
  • 1 cup goat cheese
  • ½ feta goat cheese
Instructions:

Grease a quiche mould/baking tray with olive oil, mix all the ingredients together until fully incorporated. Press the dough into the pan until all covered. Bake until the crust is firm and lightly gold between 12-18 minutes.

Sauté spinach, asparagus, artichoke, and broccoli with 3 tsp. of olive oil until soft.

In a bowl, whisk together the rest of the ingredient with half the cheese amount, and add the cooled sautéed vegetables in the mixture

Once the crust is done, toss the mixture in and top it with the remaining cheese, bake until the center is firm to the touch (30 minutes or more)

N.B: Cool for 10 minutes before slicing. It can be stored and refrigerated for up to 3 days .
